Tortilla Soup

The theme for December was small, flat and light: we requested that all gifts from family members fit those three characteristics.

The theme for January has to do with meal preparation: fast, family-pleasing and nutritious. (Don’t tell anyone, but I might let the last one slide.)

Last Tuesday, I packed half the day and accomplished quite a bit:

  • eliminated summer clothing that won’t fit, is no longer suitable or wouldn’t pass down because it’s just too worn
  • cleared a staging area for our bins (we use light plastic bins because they’re lighter and easier to pack than actual suitcases)
  • sorted through homeschool books to decide what we’d actually use in the next one or two years and what should be filed away for the next cycle through the trivium
  • removed CDs and DVDs from their cases and stored them in a media folder and organized the DVDs we’ll want for homeschool (like Math-U-See) into a separate, smaller media case

I also made several important phone calls and sent a number of emails to follow up on items that need to be accomplished before we leave.

At the end of all that, I looked up and realized I hadn’t done anything about the dinner I’d planned. Oh dear.

Tortilla SoupEnter the internet. I found this great, very quick recipe for Tortilla Soup that used just the amount of leftover chicken I had in the fridge. It was a total hit! (I made some adjustments, as always.)

2 T. Vegetable oil
1 large onion, chopped
2 c. shredded leftover chicken
1.25 oz. package taco seasoning mix (preferably chipotle)
4 15oz cans chicken broth
1 can tomatoes (When not pressed for time, I used fresh tomatoes. Canned are awful in comparison.)
Toppings:  Shredded Monterey Jack cheese, chopped cilantro leaves, tortilla chips, lime wedges.

Saute onion in oil until soft. Add remaining ingredients. Stir well and simmer for at least 10 minutes. Garnish and serve.

Note: I had no chipotle-flavored taco seasoning mix, so I used the seasoning mix plus a small piece of chipotle in adobo, Delicious!

Picking Oneself Up

Last week did not represent a stellar success in terms of meeting my goals. I’m thankful we can always start again. Over the weekend, busy as it was, somehow the family pulled together and the house returned to a state of calm after boxes and papers and piles everywhere all week long. We had a visit with some dear friends and met their new baby, and another friend visited on Sunday.

A few days ago the much-anticipated snow arrived outside our house. Yesterday afternoon Sprout headed outside to make snow angels.

Joining with Multitudes on Mondays, I’m going to count 1000 gifts in 2012. Today is the first day:

  1. celebrations
  2. new life
  3. old friends
  4. snow falling
  5. snow angels
  6. packing boxes
  7. a friend’s generosity
  8. checks on my to-do list
  9. bright new ideas
  10. finding balance
  11. recovery from injury
  12. hot apple cider
  13. finding lost items (during the packing purge)
  14. grateful children
  15. partnerships
  16. peace in the midst of chaos
  17. second chances
  18. failure as a stepping stone
  19. strength to start another day
  20. the mercy of homeschool on Mondays (p.j.s are suitable attire)

January 3 in 30: Still Refining

This week wasn’t a total success because although I went to bed on time, I spent a lot of time awake in the middle of the night. I’ve narrowed the problem down to nutrition (the mineral formula I take was unavailable) or creativity. I’m in a discovery phase with my new writing project and very excited about it. I’ve been incredibly creative and productive in the middle of the night, but at the expense of productive early mornings, which meant that even though I was in bed on time, this discipline didn’t have the desired effect of resulting in time for exercise in the mornings.

Here’s how I did with this month’s goals:

  1. Go to bed at 10:00 p.m. – I did pretty well with this all week long–my problems were in the middle of the night. I’ve taken steps to resolve this.
  2. Spend at least an hour a day purging and sorting in preparation for our move. For most of the week, I did quite well with this, but flagged at the end of the week. I made up for it in the middle of the night one of my sleepless nights and went on a real blitz. Things are starting to take shape, and looking definitely possible.
  3. Keep homeschool time sacred – My decision mid-week to simplify the homeschool even further on Tuesdays and Thursdays helped a lot with keeping this a realistic goal, but I still have room for improvement here.

Stick with it Saturday: Failure

Sam's NogginI have to report this week that I didn’t stick with it. I did a two-mile walk on Monday, but for the rest of the week I had sleep challenges. I went to bed on time, for the most part, but woke up in the middle of the night, and wasn’t able to get back to sleep. The days went accordingly after that.

I’m quite sure the problem is that I wasn’t able to purchase the mineral formula I normally take because it wasn’t available. I know from experience that my nutrition affects my sleep profoundly.

I’m not giving up, and I’m determined to stay accountable.

My minerals finally came in at the store, and I’ll be picking them up today. I also got my Turbo Jam video in the mail this week (I ordered it off kijiji.ca, thinking it was used, and it came in a wrapper. I paid $20 for it!)

I’m hoping I’ll have renewed enthusiasm for the week ahead.
